Chick Pea Chocolate Chip Cookies

These delicious cookies are made with chickpea flour. Which makes them gluten-free, grain-free and high in protein. So if you want to eat cookies why not eat a better cookie. Dry Ingredients

1 cup Chick Pea Flour (also called Gabanzo Bean Flour)

1/4 tsp sea salt

1/2 tsp baking soda

3/4 cup of Natural Sugar or Truvia (for sugar free)







Wet Ingredients

1/4 cup melted butter or coconut oil (non dairy substitute)

1 tsp vanilla

1 large egg

1/2 cup semi sweet chocolate chips or sugar free chocolate chips ( I love using Lillys sugar free chocolate chips, helps when watching carbs/sugar)

1/4 cup pecans (optional)



INSTRUCTIONS

Mix the dry ingredients together

In a small bowl combine the butter or coconut oil, egg and vanilla.

Add the wet ingredient to your dry ingredients and mix well

Add the chocolate chips and nuts (optional)

Form dough into 8-12 balls using a scooper or spoon in hand. Place onto a small cookie sheet and press gently with the back of a spatula or spoon. Refrigerate for at least 30min.


PREHEAT THE OVEN 325 DEGREES

Remove cookies from the refrigerator and place on baking sheet at least 2 inches apart. Bake until done 8-10 minutes. Let them cool if you can wait and enjoy! These cookies are gluten free, grain free, high in protein and low carb.


Tips:

  • You can substitute the egg with an egg substitute or 2 tablespoons of water or chick pea juice from can.

  • You can substitute butter with coconut oil

  • Choose your favorite chocolate chips sugar free, dark chocolate, milk chocolate or even mixed

  • Chicken pea flour is nut free. If you have nut allergies don't add the nuts.
