In a small bowl combine the butter or coconut oil, egg and vanilla.
Add the wet ingredient to your dry ingredients and mix well
Add the chocolate chips and nuts (optional)
Form dough into 8-12 balls using a scooper or spoon in hand. Place onto a small cookie sheet and press gently with the back of a spatula or spoon. Refrigerate for at least 30min.
PREHEAT THE OVEN 325 DEGREES
Remove cookies from the refrigerator and place on baking sheet at least 2 inches apart. Bake until done 8-10 minutes. Let them cool if you can wait and enjoy! These cookies are gluten free, grain free, high in protein and low carb.
Tips:
You can substitute the egg with an egg substitute or 2 tablespoons of water or chick pea juice from can.
You can substitute butter with coconut oil
Choose your favorite chocolate chips sugar free, dark chocolate, milk chocolate or even mixed
Chicken pea flour is nut free. If you have nut allergies don't add the nuts.
