Ingredients
1 lb ground turkey
1½ teaspoon salt (can use more or less)
1 teaspoon smoked paprika
1½ teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 tsp allspice
pinch of red pepper flakes (optional)
pinch of cayenne (optional) if you like it spicy
1 teaspoon sage (fresh sage is best)
2 teaspoons of brown sugar
½ -1 teaspoon fennel seed
1 teaspoon fresh thyme
1/2 cup of grated apple
olive oil for frying
Instructions
Place ground turkey in a large bowl; set aside.
Mix together spices.
Add spices to ground turkey and mix until spices are evenly distributed throughout the meat.
Shape turkey sausage into small patties or watch video for easy links.
Refrigerate overnight. This is important to let the flavors communicate😏
Heat a bit of olive oil and butter in a large skillet on medium heat.
Place sausages into the hot skillet and cook until until browned and the middle is no longer pink. (165 temperature if using a themometor)
Be careful not to overcook or the sausages will be dry in texture.
Let sausage drain on paper towels.
Tips:
You can freeze your sausages before and after cooking. I like to freeze them and take out of freezer what I need for the morning breakfast. You can thaw them in the refrigerator the day before or put them straight into the pan on a low heat until done.
If you are cooking first you can freeze and toss in the microwave or pan when ready to eat.
Spices can always be adjusted. If you like your sausage spicy, add more pepper flakes or cayenne.
The apples not only add great flavor to your sausage but also add moisture. You can omit but it will compromise the texture and the taste.
Brown sugar is added to give that maple flavor. You can omit if doing a keto or sugar free version. If you have sugar free maple syrup substitute it for the brown sugar. 1 tablespoon will do.
It is important to make a day before you eat. Why? Overnight gives the mix a chance for the flavors to come together. Almost like a marinade. The meat and spices communicate together to make one delicious recipe.
This is a great breakfast sausage. The advantage to making it yourself is not only that it is made without preservatives or additives, you can make the patty any size of shape. Make it a little large for a breakfast sandwich with my butter biscuit recipe.
