Jalapeño Cookies "What you say!"

Super easy and delicious cookies. If you love dark chocolate and pistachios this will be your new favorite. Add a little jalapeño and you good a cookie recipe to share and enjoy!


INGREDIENTS


2 1/4 CUPS OF AP FLOUR

1/2 TSPS SALT

1/2 TSP BAKING SODA

1 EGG

1 EGG YOLK

2 TSP VANILLA

1 CUP WHITE SUGAR

1/2 CUP BROWN SUGAR

3/4 CUP MELTED BUTTER

1 CUP JALAPENO PISTACHIOS (Jalapeño Chips will work great if no nuts are desired)

1 CUP CHOPPED DARK CHOCOLATE (your favorite brand)

 

Preheat oven 325 degrees before baking. You will need cookie sheets and parchment paper.

  • In a medium bowl combine flour, salt and baking soda.

  • In a mixing bowl combine sugar, melted butter, vanilla and eggs. (make sure butter is cooled not making scrambled eggs)😊

  • Mix in a mixer on high for 4-5 mins. Your mixture should resemble pancake batter when ready.

  • Add flour to your wet ingredients and mix until just blended. (no flour showing)

  • Stir in Jalapeño pistachios and chocolate.

  • Using a scooper place dough onto parchment paper. If using same pan for baking make sure each scoop is 2" apart.

  • Refrigerate scoops in pan for at least 30 minutes before baking. (overnight will work great)

  • When ready to bake make sure each scoop is 2" apart. Bake in the oven at 325 degrees for 15-20 minutes or until center rises.

  • Remove from oven and immediately top with crushed pistachios or jalapeño chips.

TIPS

  • Use Jalapeño chips instead of pistachios if no nuts are desired.

  • Make sure butter is cooled before adding to egg mixture

  • Yes, your cookies will turn out better if you refrigerate the scoops before baking for at least 30 min. You can also make a day ahead if needed.

  • Bake at 325 and not 350 for this recipe.

  • You can add jalapeño chips along with pistachios for an extra crunchy and spicy cookie.

  • You can use chocolate chips for this recipe however the chopped chocolate gives it a different look and texture.

  • Dark chocolate not your thing? Use milk chocolate or white chocolate.
