I had the pleasure of taking an exciting vacation to Turks & Caicos. Such an awesome and beautiful island. There were lot's of delicious dishes! One of my favorite dish was the grouper fish with mango salsa and rice. What is grouper? Grouper has a mild yet distinct flavor, somewhere between Bass and Halibut. The taste of most Grouper is similar, with slight differences in flavor and texture, depending on size, species and location of harvest. Red Grouper is sweeter and milder than Black Grouper. Grouper is not that easy to find locally, at least not for me. But you can order online I substituted grouper for rockfish is this recipe. You can also choose your favorite fish and make this delicious recipe. Make sure you watch the video for vacation tips and recipe illustration.
For the fish
2lbs of Rockfish (or favorite fish)
salt and pepper for seasoning
Tablespoon of olive oil
Season the fish and grill or pan sear until done and set aside. Pretty easy right? You can also bake in the oven for 20-25 minutes until done.
Mango Salsa
3 ripe mangos, diced (see photos)
1 medium red bell pepper, chopped
½ cup chopped red onion
¼ cup packed fresh cilantro leaves, chopped
1 jalapeño, seeded and minced
1 large lime, juiced (about ¼ cup)
In a serving bowl, combine the prepared mango, bell pepper, onion, cilantro and jalapeño. Add the lime juice
Using a large spoon, stir the ingredients together. Season to taste with salt, and stir again. For best flavor, let the salsa rest for 30 minutes are longer. You can also make the night before. Cover and refrigerate.
Coconut Rice
Ingredients
1 (14 ounce) can coconut milk 1 ¼ cups water 1 teaspoon sugar 1 pinch salt 1 ½ cups uncooked jasmine rice
In a saucepan, combine coconut milk, water, sugar, and salt. Stir until sugar is dissolved. Stir in rice. Bring to a boil over medium heat. Cover, reduce heat, and simmer 18 to 20 minutes, until rice is tender
Tip! You can also bake rice at 325 degrees for 20-25 minutes.. Makes delicious fluffy rice.
